Intro: Pine Nut & Dried Tomato Hummus
1 20 oz can chickpeas (with about 1/4 cup of juice reserved)
3 tbsp lemon juice
3 tbsp pine puts
3 tbsp dried tomatoes, finely chopped
1 tbsp almond butter
1 tbsp minced garlic
2 tbsp sesame oil
1 tsp cumin
In a food processor, combine the lemon juice, chickpeas, almond butter, and sesame oil, and combine until it has a paste-like consistency.
Stir in the cumin, garlic, pine nuts, and dried tomatoes. Serve with vegetables or crackers.
