Take a New Zealand Food Treasure, the Pineapple Lump and turn it into a beautiful Xmas Cake.
This project used five packets, it was a hot summers day, so they were chilled in the fridge before use. Bring out one packet at a time to work with.

Step 1: Melting Chocolate Buttons
Place chocolate buttons in a bowl over a container of hot water to melt. This will be your cake building cement.
Step 2: Construct Your Base Layer
Arrange Pineapple Lumps in criss-cross pattern to start forming your cake. It can be hollow in the middle, or you can fill the middle with a Pineapple lump tower. Glue each of the bricks together with a dab of melted chocolate.
Step 3: Continue the Build, Layer Upon Layer
Go as high as you dare.....
If your building an internal tower like me, make sure that you keep pace with the outside walls otherwise you can't reach in to add to it.
It can help if some of the bricks on your walls stick out at odd angles. This way when it comes to the eating, it is easier for your friends to grab a brick and tear it off.
Step 4: Harvest Wild Strawberries and Fresh Mint From Your Garden.
Ha, and you thought we were going to top this off with jelly-babies, this is a healthy cake!
Step 5: Decorate the Top of Your Finished Cake With a Xmas Theme.
Chill your final creation in the fridge until time to serve.
