Pink Salad

Here's a summer favourite of mine. I think it's mainly a Dutch recipe,  but I may have made that up.
If you think that apple and pickled herring should never meet on the same plate, then this is not for you. If you have an open mind to such pairings, read on...

For use as a main meal for two people, I use

- two big potatoes, diced, cooked, cooled off
- an apple, cut up
- a small onion, chopped into tiny bits
- two pickled herrings, cut into pieces
- three small boiled beets*, diced

*) We can buy them boiled and packaged. It's neat.

For the dressing, I'd suggest that you pick as many as you wish of the following ingredients:

- olive oil
- yoghurt (plain)
- mayonnaise
- lemon juice
- vinegar
- salt
- black pepper
- mustard
- dill

Mix the solid ingredients gently, in a big bowl. Add the dressing and spoon it through. That's all.
The beets will give the salad a nice pink colour.
Works as a summer dinner, or as a lunch dish. Also nice for a picnic.

Oh wow, I love this stuff, I can't remember where I had it last (a deli in miami somewhere) But anything with pickled herring is a plus for me.

What kind of pickled herring do you use? We have a brand here called Vita which is pickled in white wine with onions and another by the same brand in a sour cream sauce.

I use the simple, cheap pickled herring that we can buy in every supermarket here. It's also known as bismarck herring. It's similar to this one I think... in the marinade, it mainly has vinegar, salt, a bit of sugar, onions and sometimes peppercorns.

Hey I just made this the other day (maar ik ben dan ook Nederlander ;))

Turned out a bit too pink for my fancy when I brought it to work.. Decided to drop the herring and the apple on top the next time and it looked much better (for my eye that is).

I also added a pickle (also on top to keep it green) but I didn't do the potato since it was supposed to be a diet-salad (and every Cal counts). Oh and the beets were pickled as well (crinkle cut).

Note: It was too sour for my taste the first time. I washed all the pickled stuff (including the herring) the second time and the taste was much mellower (better for my taste)
