Step 1: Step 1: the Cookie Ingredients
350g Plain Flour
115g Corn Flour
115g Caster Sugar
250g Unsalted Butter
400g Icing Sugar
Red Food Colouring
50g Dark Chocolate
Black Food Colouring
Step 2: Step 2: Baking the Cookie
Start by getting a bowl. Take 350g plain flour, add 115g of cornflour and 115g of caster sugar. Throw in some room temperature butter (250g-cubed) and mix well with your hands. Keep kneading until the mixture comes together. [If you were JUST making my mums shortbread, add 1 tsp vanilla extract and 2 tsp of lemon juice. But we aren't doing that, just so you know for the future. ]
Tip onto a lightly floured surface, roll flat with a rolling pin (if it crumbles, knead it more, it will stick together, trust me). Once it is 5mm thick, start cutting 4cm circles out. Place onto a baking tray and put into the fridge for around 30 minutes. Put your oven onto 175ºC around this time.
Take out the fridge, pop directly into the oven for 10-12 minutes or until lightly browned on the outside. Leave to cool on a wire rack.
Step 3: Step 3: Decorating the Cookie
While cooling, split your icing into two bowls of 200g. Add 1 tbsp of water at a time until you reach a thick, but paste like viscosity. Sort of like syrup. Add red dye to one bowl. Then paint, pipe or spoon the white colour onto one side, and do the same with the red on the other. It doesn't matter if the edges aren't straight, as you will be covering them shortly.
Take 50g of dark chocolate and melt in a bowl over a pan of hot water (a double boiler some call it). Add black food colouring to it once it has melted. Then put into a piping bag and snip the end (make sure its a small hole at the end as you need to be precise). Pipe a stripe where the red and white meet. Then pipe a big blob for the Poké Ball button. Add a circle of white to the blob in the middle and TA DA!
Step 4: Step 4: Gotta Eat 'em All!
Yummy Poké Ball Cookies. The perfect snack for wandering aimlessly around the city at night with strangers. Now, go forth and adventure. Or watch the video, whatever you desire.
