Step 1: Ingredients

5 potatoes
1 onion
1 carrot
2 eggs
1/4 cup matzah meal
salt and pepper
Oil (for frying latkes)

Step 2: Prepare Vegetables

Wash, peel and grate the potatoes, onion, and carrot.  Put grated vegetables in a large bowl and mix.

Step 3: Make Latke Mixture

Beat eggs and add them to the potatoes, onion and carrot.   Add the matzah meal and mix well.

Step 4: Frying Latkes

Put oil in a skillet (enough to fry latkes). Heat oil and then put latke mixture by 1/4 to 1/2 cup into the pan. Cook on both sides until mixture is cooked. Place on plate and paper towel to cool off.

They taste a lot like hash browns if you've had those. If not, just make them! They are delicious and easy (obviously)!

Oh, now I want some with applesauce. That is the best. Almost makes me want to run to the grocery for eggs!

Applesauce makes a great dipping sauce...but you should try them with some sour cream! It really sets them off into a different dimension. Gotta try this recipe, looks great!

I ♥ latkes especially on a cold winter night.
BTW they taste better with apple sauce on top!
