Every Hanukkah I look forward to eating potato latkes. Here is an authentic latke recipe straight from a Jewish mother.
Step 1: Ingredients
1/4 cup matzah meal
salt and pepper
Oil (for frying latkes)
Step 2: Prepare Vegetables
Wash, peel and grate the potatoes, onion, and carrot. Put grated vegetables in a large bowl and mix.
Step 3: Make Latke Mixture
Beat eggs and add them to the potatoes, onion and carrot. Add the matzah meal and mix well.
Step 4: Frying Latkes
Put oil in a skillet (enough to fry latkes). Heat oil and then put latke mixture by 1/4 to 1/2 cup into the pan. Cook on both sides until mixture is cooked. Place on plate and paper towel to cool off.
