I always thought making polenta meant standing over a saucepan and constantly stirring a pot. Not with the pressure cooker recipe. Pretty darn simple and ready after 5 minutes of pressure cooking. Great with vegetables or meats. Add butter or cheese and this is a vegetarian recipe, serve with soy cheese its a vegan recipe.

Step 1: First Watch the Recipe Video
Polenta is ground corn, be sure the package says Polenta, as it is a specific grind of corn. Corn grits are similar, but depending on who you ask and what state they are from, grits may or may not be similar to polenta ;) Here is the recipe on our website.
Step 2: Double the Recipe and Make Griled Polenta
The cool thing about this recipe is you can make polenta for dinner, then pour the remaining polenta into an oiled loaf pan and put it in the fridge overnight to set up. Un-mold it the next day, cut into 3/4" slices and grill with ample oil in the pan.
