Right now I'm in a pumpkin baking and cooking fever. So this time I made pumpkin bars with chocolate chips. They are perfect for fall and a delicious healthy snack! These pumpkin bars are also pretty easy to make. You just need to cook the pumpkin beforehand and it takes some time to cut the pumpkin. They are also very filling because of the pumpkin puree and in combination with chocolate chips it tastes so good!

Step 1: Make the Dough
At first, make your pumpkin puree, either cook pumpkin pieces in salted water for 15 minutes or roast pumpkin halves in the oven for 30 minutes. In a mixing bowl whisk together flour, salt, baking powder, and vanilla extract. Combine all wet ingredients separately in a bowl. Melt coconut oil and pour oil together with agave syrup into the bowl. Add your Chia eggs and whisk it all together. Then add your pumpkin puree and chocolate chips, mix again and then slowly add your wet ingredients to the dry ingredients while stirring.
How to make Chia eggs?

Step 2: Bake Them!
Then add your pumpkin puree and the chocolate chips, mix again and then slowly add your wet ingredients to the dry ingredients while stirring. Knead the dough with your hands and spread it evenly in a baking dish. Then put your pumpkin cake blondies in the oven for about 20 – 25 minutes,
