This is a quick, easy, and delicious way to make apple sauce. The perfect blend of pumpkin spice, lemon juice, and sugar with these honeycrisp apples. Use apple of your choice--and blend it up in your blender.

Step 1: Ingredients
4 honeycrisp apples (or a blend of apples of your choice)
2 tablespoons lemon juice
1 teaspoon of Pumpkin Spice
1 tablespoon of sugar
NOTE: You can choose apples that work best for you, and vary on the sweetener---it's up to you.
Step 2: Prepare 2 Apples
Using a special device (as shown in pic) or using your hands and a knife, peel, core, and slice two of the four apples. Place in a bowl until ready to use.
Step 3: Prepare the Other 2 Apples
don't peel the other two apples--the skin, when not blended finely, gives an impression of shredded peppermint. Just cut and core these two apples.
Step 4: Blend
Place all ingredients (lemon juice, apples, pumpkin spice, and sugar) in blender, and blend on medium speed (Vitamix variable 5-6) for a few seconds after circulation. You can blend on high speed for a much smoother consistency without telltale peels of red apple skin.
NOTE: if you have a Vitamix, be sure to use the tamper to push down on stubborn stationary ingredients.
Step 5: Done!
Serve and enjoy.
NOTE: As is the case with most things, this recipe can be doubled, though it may be harder to blend with all the extra ingredients.
