Introduction: Quesadillas With Pizzazz

Quesadillas are one of the most delicious Mexican dishes, yet they can be one of the most difficult to make without a quesadilla maker. However a Pizzazz (see photo below), which is designed to cook frozen pizzas, can be easily adapted to make quesadillas. The Pizzazz works great because it makes the quesadillas crispy, like a quesadilla maker, yet eliminates the need for a quesadilla maker. If you don’t have a Pizzazz, you can get one at your local Wal-Mart or Target for around fifty dollars. 
This recipe requires minimal cooking experience, if you can follow instructions, you can make it. It only takes twenty five minutes to make this delicious meal, and the ingredients are relatively inexpensive. Since this meal is so simple and economically priced, this recipe is a great choice for you to try. 

Step 1: Gather Ingredients and Supplies

The following ingredients will make four quesadillas.   One quesadilla will feed approximately one adult, so adjust the recipe accordingly for the desired number of quesadillas. 
Ingredients:
·8 – Flour Tortillas
·4 – Thawed Chicken Breast
·3 Cups Shredded Cheddar Cheese
·1 Packet Taco Seasoning
·1 Tomato
·1 Green Pepper
·Sour Cream
·Salsa
Supplies:
·Pizzazz Pizza Oven
·Medium Size Nonstick Frying Pan
·Steak Knife
·Plastic Spatula

Step 2: Prepare Green Pepper, Tomato, and Chicken for Cooking

In this step you will prepare the vegetables and the chicken for cooking.
Green Pepper
1.Wash the green pepper.
2.Cut the green pepper in half and clean out the seeds and stem. 
3.Chop the green pepper into pieces that are approximately ½ in by ½ in (see picture below) and set aside. 
Tomato
1.Wash the tomato.
2.Cut stem and core out of the tomato and discard.
3.Chop the rest of the tomato into ½ in by ½ in pieces (see picture below) like the green pepper, and add to the green pepper. 
Chicken
1.Make sure that the chicken is fully thawed.
2.Cut the chicken into small strips that are about ½ in by 2 in (see picture below). 
3.Set the chicken aside, separate from the vegetables as you will be cooking it first. 
Once you have prepared the green pepper, tomato, and chicken you are ready to begin cooking. 

Step 3: Cook Chicken, Green Pepper, and Tomato

Begin by putting the chicken in the nonstick frying pan; do not put the vegetables in at this time. Place the frying pan on the stovetop burner and set to medium heat. Stir and flip the chicken as needed in order to keep it from sticking. Cook the chicken until it is cooked through, this will take about 8 minutes. 
In order to test if the chicken is done, cut a piece of chicken in half. If it is a white color inside, and all of the pink is gone it is done; if it is still pink, continue cooking until done. 
Once the chicken is done, push it up the sides of the pan to make an opening in the center of the pan for the tomato and green pepper. Turn the burner down to medium-low and add the vegetables to the center of the pan. Stir the vegetables as needed in order to cook all sides. Cook the vegetables for about 4 minutes or until they are warm and tender. 

Step 4: Add Seasoning and Simmer

Once the vegetables are done as described in Step 3, mix the chicken and the vegetables together in the frying pan. Turn the burner down to low or simmer. You want enough heat to keep the mixture warm, but not too much heat that it dries out and burns. 
Add the taco seasoning to the center of the chicken and vegetable mixture. Dump 1/3 cup water on top of seasoning. Stir the seasoning and water in the chicken and vegetables until everything is evenly coated. Continue to let the mixture simmer until you are ready to use it in Step 6. 


Step 5: Heat Tortilla Shells on Pizzazz

Place two tortilla shells on the Pizzazz, offset as in the picture below. Since the Pizzazz isn’t quite large enough, the tortilla shells will overlap. Turn the Pizzazz on the double burner setting so heat will come from the top and the bottom. Add 1/2 Cup Cheese to the top tortilla shell so it covers the entire shell. Allow the Pizzazz to cook for approximately two minutes, or until the cheese begins to melt. 

Step 6: Add Chicken Mixture to Quesadillas

Once the cheese has begun to melt, place one fourth of the chicken and vegetable mixture on top of the melted cheese. Then sprinkle a little more cheese on top of the chicken and vegetable mixture on the tortilla. Note that it may be easier to unplug the Pizzazz to keep it from rotating while adding the chicken and vegetables and the cheese. Just remember to plug it back in after you are done. Allow the freshly placed cheese to melt on top of the chicken and vegetables, by letting the Pizzazz cook for another minute. 
 After the cheese on top is melted, take the tortilla shell that is on the bottom of the Pizzazz and place on top of the other tortilla shell, chicken, vegetables, and cheese. Apply pressure with the spatula to get both tortilla shells to stick to the middle ingredients. Next allow the quesadilla to cook on the Pizzazz for approximately one more minute, so it becomes a little crispy. Remove the quesadilla from the Pizzazz using the spatula, and place on a dinner plate. 
In order to make the next three quesadillas, repeat Steps 5 and 6 three more times. Once you have used up all of the chicken and vegetable mixture, remember to turn off the stove. Also unplug the Pizzazz once your last quesadilla is done. 

Step 7: Enjoy Your Quesadillas

Now that the quesadillas are cooked it is time to enjoy them. I prefer to spread sour cream and salsa to the top of mine. Serve the quesadillas with chips and salsa as a side to finish of a great meal.

Note that there are many possible variations to this recipe that allow you to personalize this meal to your taste. For example try adding jalapeno peppers to chicken and vegetable mixture for a little spicier version. You could also add mushrooms and onions to the chicken mixture for added flavor. Try different combinations of ingredients until you find what you like best.
