Step 1: Prep:
Dice an assortment of fruits and vegetables.
1 mango, peeled and diced
1/2 green pepper seeded
1 tomato, diced
1/2 cup black olives, sliced if you like
1/2 cup strawberries
1/2 cup feta, diced
3-4 sprigs of mint, minced
2 tbsp. EVOO
1/2 lemon, zested and squeezed
Mix all ingredients together and serve!
