Rainbow Unicorn Cake

About: I like making little treats and pretty much doing anything crafty. I want to learn new techniques and share how I do what I do.

Make someone's birthday special with a rainbow unicorn cake!

Step 1: Cream Cheese Buttercream Icing

This is a nice smooth buttercream icing. Doesn't hold up super well in 90 degree plus weather but holds up okay if refrigerated ahead of time.

1 cup butter

1/2 cup veg shortening

8 oz cream cheese

3 lbs powdered sugar

1 tbsp. vanilla extract

2-3 tbsp. milk

Cream the butter and shortening in a mixing bowl on low speed until smooth (about 2 min).

Add vanilla and cream cheese and mix again until smooth.

Gradually, add powdered sugar until all combined.

Add a little milk to make the mixture smoother and creamier.

Store in an airtight container and go ahead and put some in a prepared piping bag at this point.

Step 2: Stacked

I made a yellow box cake mix. You will need 1/2 cup oil, 1 cup water and 3 eggs.

Make 3 - 6" cakes in any flavor. Let cool completely

Place one on cardboard circle and use a serrated knife to cut the top of the cake flat and even, add on some icing and smooth flat, add the next layer and repeat.

Apply a layer of butter cream icing all the way around the cake and on top and smooth out. Refrigerate for one hour and then add one more layer of butter cream icing.

Step 3: Decoration

Gather the decorations,

I'm using shape-n-amaze,

Food color pens,

Mini M&Ms

Mini rainbow color chip sprinkles,

Icing bag with star tip

"Happy Birthday" sign

6" round cardboard base

Step 4: Do You Wanna Build a Unicorn?

Roll out about a 5" pad of shape and amaze dough on a silicone mat, draw a unicorn with the black food marker,

Carefully cut out with a knife. leaving a section for the tail, color the tail with other food marker colors.

Cut out a triangle from the dough and press under the top of the head.

Add butter cream dots on the mane and add mini M&Ms. Add some shading on the unicorn with purple marker.

Step 5: Color the Sides

I had some left over 3 color swirl icing left over so decided to use it to decorate the sides of the cake. The icing blends nicely for a cool effect.

To make a batch of the 3 color swirl see my instructable: http://instructables.com/id/Rainbow-Swirl-Icing/

add vertical dabs of your tri color in a vertical like or you can add dollops of various colors then blend with the flat siding of an icing spatula.

Step 6: Finish

Pipe icing along the edge and add some colored decoration chips.

Display on a bright-colored cake stand.

Keep in the fridge until the big day.
