Introduction: Rainbow Veggie Flatbread Pizza

Rainbow veggie flatbread pizza - When i see the rainbow colour contest i would love to enroll to the contest and firstly i planned to cover all the colors into my recipe so that it will be more colorful like rainbow so i have chosen rainbow pizza with fully loaded with veggies it gives more beautiful colors.The taste is awesome and my kiddo loved it.I will share detailed recipe below

Step 1: Ingredients

For pizza dough:

1. All purpose flour - 100g

2. Yogurt - 4 tbsp

3. Dry active yeast - 1 tbsp

4. Sugar - 1 tsp

5. Salt - 1 tsp

6. Warm milk - 100 ml

For pizza toppings:

1. Brocolli - 1/2 cup

2. Corn - 100g

3. Purple onion - 1/4 pieces

4. Orange bell pepper - 1/2

5. Mini tomato - 10 pieces

6. Mozzarella cheese - 80 g

7. Mixed Italian herbs - a pinch

8. Oregano - a pinch

For greasing:

1. Olive oil

Step 2: Activating Yeast:

1. Take a bowl,add 100 ml warm milk

2. Add 1 tsp of sugar,mix them well. Let the sugar dissolve completely

3. Add 1 tbsp of dry yeast,mix it well

4. Let it rest for 5 mins

5. After 5 mins yeast will activate

Step 3: Making Dough:

1.Take a wide bowl and add the ingredients one by one

2. Add 100g of all purpose flour/pizza flour to the bowl

3. Add 1 tsp of salt

4. Add 4 tbsp of yogurt

5. Mix them well altogether

6. Now slowly add the active yeast milk and gently mix with hand. Do not add that mixture at a time

7. Make it as a soft dough

8. Now grease the dough with oil and cover it with lid let it rest for 2 hrs

Step 4: Get the Things Ready for Toppings:

1. Cut all the veggies

2. Orange bell pepper - Cut them into a square shape

3.Purple onion - cut them into a 1 cm square

4. Broccoli - cut them into smaller so that it is easy to eat

5. Mini tomato - cut them into half

6. Sweet corn - i have taken frozen corn.you can choose fresh corn also

Step 5: Microwave the Veggies

1. Broccolli - wraps it with aluminium foil and heats it in the range of 600w for about 1 minute

2, Sweet corn - Wraps it with aluminium foil and heats it in the range of 600w for about 2 mins

Step 6: Roll Out - Pizza Rough

1. Dust some flour over the counter-top

2. pizza dough - Take it from the bowl and place it on a working surface

3. Sprinkle some flour if needed

4. Gently roll it to a rectangular shape as much you can

5. Dust out the extra flours on the dough top

Step 7: Cut Into Desired Shape

1. I have chosen 13*18 inch baking tray

2. Place the tray over the dough

3. Cut them into a required baking tray size using knife

4. Remove the extras

5. Rectangular size pizza dough is ready for baking

6. Now grease some oil on the baking tray

7. Place the pizza dough on the baking tray

Step 8: Halfcook the Dough:

1. Preheat the oven to 500 degree F

2. Bake the dough at the lower rack about 10 - 15 mins or until the bottom is slightly golden and crispy

3. I cooked mine for about 12 mins

4. After 12 mins removed from the oven let it cool down for about 5 mins

Step 9: Layer the Toppings:

1. Spread some tomato sauce on the top of the pizza base

2. Spread mozzarella cheese over the pizza base

3. Sprinkle some mixed Italian herbs

4. Sprinkle some oregano

5. First layer - Place the mini tomato as i shown in the picture

6. Second layer - Place the Orange capsicum lined up after mini tomatoes

7. Third layer - Lined up the sweetcorn next to the capsicum

8. Fourth layer - Lined up the Broccoli as i shown in the picture

9. Fifth layer - Lined up the Purple onion as i shown in the picture

10. Now its Ready to bake

Step 10: Bake!

1. Place the baking tray to the preheated oven for 500 degree F

2. Bake it for another 12 to 15 mins

Step 11: Plate It!

Yummy veggie cheesy loaded flatbread pizza is ready to serve
