Ras Malai Trifle

Ras Malai is a popular Indian dessert made from milk and milk powder. Flattened Balls made from milk powder are cooked in milk as to absorb all the juiciness. It is best served chilled topped with a generous amount of nuts. However, in this recipe I have made a fusion of this delicious Indian dessert. I added in some fruits and crushed cornflakes for a crunchy texture. And may I say, it has taken the traditional Ras Malai to a level higher. The juicy goodness mixed with the sweetness of fruits is heavenly. They make a yummy party dessert and can be made and set in advance.

Step 1: Ingredients:

For making Ras Malai:
1 liter full cream milk
1 cup milk powder
3/4 cup sugar
1/4 tsp cardamom powder
2 tbsp butter
1/2 tsp baking powder
1 egg, lightly beaten
2 green cardamoms

For assembling the trifle:
1 cup cornflakes, crushed
1/4 cup strawberries, chopped
1/4 cup kiwi, chopped
1/4 cup apple, chopped
1/4 cup blueberries

For garnish:
2 tbsp grated chocolate

Step 2: Making the Ras Malai

Boil the milk and sugar in a pan. Once it comes to a boil, reduce the heat to medium - low flame. Let the milk thicken, scraping the sides of the pan. Let it be on flame for about half an hour.
Meanwhile, mix together milk powder, baking powder, cardamom powder and butter. Add the beaten egg little by little til the mixture comes together. Knead for a while till you get a smooth texture. Do not over knead. The dough will start to break.
Make 8 flattened discs.
Drop one by one in the milk along with whole cardamoms. Let cook for a while. Cover partially and allow to cook flipping the discs on the other side as well.
When it appears to be cooked, switch off the flame and allow to cool.

Step 3: Assembling the Trifle:

Take two bowls, add first layer of crushed corn flakes.
Second layer is crushed Ras Malai.
Third layer is chopped fruits.
Continue repeating the layers.
Add the top layer garnish with fruits and grated chocolate.
Serve chilled.
