Raw Slaw

Super Foods are great for this time of the year when you want to look your best as the warm weather approaches.
This raw slaw is a great side, lunch or main if you are a vegan/vegetarian. I hope you love this...Experiment add your choices of veggies to make it you own.



1 carrot peeled, grated
3 radishes, washed, julienned
1/2 English cucumber washed, julienned
1 ida red apple, washed, grated
1 cup nappa cabbage, finely chopped
Mix all ingredients together
Toss with dressing
Dressing:
1/4 cup EVOO
3 tbsp white balsamic vinegar
pinch of salt & pepper
1 tsp pureed ginger
4 mint leaves julienned

Serves 2-3 people

Step 1: Prep:

Cut all vegetables and fruits to size

Step 2:

Mix together the dressing

Pour over the veggies and fruit

Serves: 2-3
