Introduction: Russian Tea Cakes

Russian Tea Cakes is a bite-sized cake that has the nickname snowball cookies. They are a perfect treat to have with tea or to share with your family and friends.
Yield: two dozen cakes

Step 1: Ingredients

Ingredients:
1 cup butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cup all purpose flour
1/4 teaspoon salt
3/4 cup pecans
Additional powdered sugar for rolling cakes in

Step 2: Cream Butter and Sugar

In a large bowl add one cup of butter and 1/2 cup of powdered sugar. Mix until it is light and fluffy. Add vanilla.

Step 3: Mix Flour and Salt

In a medium bowl mix flour and salt and add it to the butter mixture half a cup at a time. Mix thoroughly.

Step 4: Chop Pecans

In a food processor, chop pecans until the desired consistency is reached. I prefer to have the pecans chopped very fine.

Step 5: Mix Pecans Into the Butter Mixture

Thoroughly mix pecans and transfer to a storage container. Let cool in the fridge for at least an hour.

Step 6: Bake Cakes

Preheat oven to 400 degrees Fahrenheit. Roll the dough into one inch balls in the palm of your hand. Place on ungreased cookie sheet two inches apart. Bake for 10-14 minutes or until lightly brown.

Step 7: Roll in Powdered Sugar

Once the small cakes come out of the oven, roll them in additional powdered sugar. It must be done while they are still warm so the sugar will stick. Place cakes coated with powdered sugar on a cooling rack and let cool completely.

Step 8: Enjoy!

Sit down in your favorite chair grab a couple of cakes, pour yourself a cup of milk or tea, and enjoy!
