SOFT & CHEWY CHOCOLATE, PEANUT BUTTER & RAISIN OATMEAL COOKIES

Step 1: COOKIES DOUGH
113g Unsalted Butter (Softened)
100g Light Brown Sugar
75g Caster Sugar
85g Peanut Butter (Smooth)
1 Large Egg
1tsp Vanilla Extract
125g Plain Flour
1/2tsp Baking Soda
180g Rolled Oats
100g Chocolate Chips
Cream the butter and sugars together until light and fluffy. Add the peanut butter, egg and vanilla extract and mix well. Next, add the flour, salt, cinnamon and baking soda to the batter. Finish by adding the rolled oats, chocolate chips and raisins and mix until everything is combined. Cover the cookie dough with cling film and leave to chill in the fridge for 2 hours.
Step 2: BAKE
Once chilled, scoop spoonfuls of the cookie dough and place on a baking tray lined with baking paper. Add a few extra chocolate chips to the top of the cookie dough balls before baking at 176 degrees C / 350 degrees F for 12 minutes. Leave to sit in the baking tray for 3-4 minutes before transferring to a wired wrack to cool completely.
