Introduction: SWEET & SOUR CHICKEN RECIPE

Step 1: FRIED CHICKEN

2 Chicken Breasts

125g / 1 Cup Plain Flour

125g / 1 Cup Cornflour

1 Large Egg

1tbsp Baking Powder

Ice Cold Water

Mix the flour, cornflour and baking powder together. Season with salt and pepper. Add enough water to create a batter and leave to sit for 30 minutes. Chop the chicken into small cubes. Season with salt, pepper and soy sauce. Add the egg and leave the chicken to sit for 30 minutes. Add the chicken to the batter and leave to sit for another 30 minutes. Fry the chicken at 200 degrees C for 3 minutes.

Step 2: SWEET & SOUR SAUCE

1 Onion (Medium)

1/2 Red Pepper

1/2 Green Pepper

2 Spring Onions

1 Garlic Clove

125ml / 1/2 Cup Water

1tbsp Cornflour

2tbsp Brown Sugar

2tbsp Balsamic Vinegar

2tbsp Tomato Ketchup

1tbsp Tomato Puree

2tbsp Soy Sauce

2tbsp White Wine Vinegar

432g / 2 Cups Canned Pineapple

Mix all the wet ingredients together with the cornflour. Saute the onions, followed by the rest of the vegetables. Add the pineapple and the wet mixture. Simmer for 5 minutes and finish by adding the friend chicken.
