Ingredients: ( for Salmon fish curry Serves 3 - 4 )

Salmon Fish - 500 gms (cubes) (your choice = bone-in/boneless & with/without skin )
1/3 tsp - mustard seeds
1/2 tsp - methi / fenugreek seeds
1/2 tsp - cumin seeds
3 sprigs - curry leaves
2 - green chilli
1 tbsp - ginger (finely chopped)
3 medium onion (finely chopped)
2 tomato (chopped)
3/4 tsp - turmeric powder
2 tsp chilli powder (add kashmiri chilli powder for natural red color :)..
1.5 tbsp coriander powder
1 tbsp fennel powder
1/2 tsp cumin powder
Tamarind paste - 1 tbsp (or 1/3 cup of diluted tamarind juice)
salt to taste
3 cups of water

Method
:

Step 1)
Be ready with all the ingredients before cleaning the fish.

Step 2) Clean the fish - ( I used salmon with skin, so I scaled, rinsed and cut into 8 pieces). After rinsing, drain the water and place on a kitchen tissue.

Step 3)
Heat a big curry pan and pour 1 tbsp of oil.

Step 4)
When hot, add the mustard seeds and let it crack. Add methi/fenugreek seeds, cumin seeds, chopped ginger and curry leaves.

Step 5)
Add the chopped onion, green chilli and mix. Cook until the onion turns light brown (cover and cook to speedup the cooking time).

Step 6)
Once the onion is light brown, add the chopped tomato and cook on high for a minute. Then reduce to medium and cook until soft.

Step 7)
Reduce the heat to low, add the spice powders (turmeric powder, chilli powder, coriander powder, fennel powder, cumin powder) and mix for 20 seconds.

Step 8)
Add the tamarind paste along with 3 cups of water. Add 1 tsp salt and bring it to a boil.

Step 9)
When it starts boiling, drop the fish pieces and reduce the heat to medium. Cover and cook for 25 minutes.. (note: after 15 minutes, check salt and add if needed)

Step 10)
Salmon curry is ready... you can have it with rice, pancakes or flatbreads :)..
