Semolina Balls

These are sweet balls made using semolina, ghee (clarified butter) and sugar.

Supplies:

1 cup semolina

4 tablespoons + 1 teaspoon ghee [clarified butter]

1 cup granulated sugar

4-5 green cardamom pods

2-3 tablespoons milk

2 tablespoons cashew, broken

1 tablespoon raisins

Step 1: Preparation of Semolina

In a pan heat 1 tablespoon of ghee on medium heat. Once hot add the semolina and roast it stirring continuously till you get a nice aroma, this will take around 6-7 minutes. Please remember to keep stirring because semolina once hot can burn very quickly. You don’t want it to stick to the pan. Once roasted, set aside and let it cool down a bit.

Step 2: Roasting Cashewnuts

In another pan, heat 1 teaspoon of ghee on medium heat. Once hot, fry the cashews and raisins in it till nice golden brown.

Step 3: Blending Sugar and Cardamom

In a blender, grind together granulated sugar and cardamom seeds

Step 4: Mixing

Mix the grind sugar into the Semolina and nuts mixture.

Add 3 tablespoons of warm melted ghee and mix.

Also add 1-2 tablespoon of milk.

Step 5: Shaping

Take a small amount of mixture in your hand.

Press it with your hands and form a round shape of the size of a golf ball. If you are not able to form a round shape, add 1 more tablespoon of milk.
