Slow Cooked Venison in Red Wine

This is a simple, intensely savoury winter casserole which is ideal for a slow cooker or cooking in a low oven. You can easily also substitute beef in place of the venison or adapt with other root veg to give a warming meal.

Should serve 4-6 and freezes well if you are preparing meals in advance. Quantities double easily

Ingredients:

  • 500g diced venison (or beef)
  • freshly ground black pepper
  • a large onion
  • 2 cloves of garlic
  • some olive oil
  • a dessertspoon or so of plain flour
  • 250ml red wine
  • a couple of bay leaves
  • a couple of stems of thyme
  • a big(ish) dollop of créme fraiche
  • salt and pepper
  • Root vegetables (I used a medium sized celeriac and a large potato but feel free to improvise

Step 1: Prepping the Meat

Put the flour in a wide flat dish and grind in a good quantity (a couple of teaspoons full) of black pepper. Toss the meat around in the flour to coat evenly on all sides

Step 2: Browning the Meat

Heat a wide, heavy bottomed pan over a medium/high heat and when it is up to temperature add the olive oil. Brown the meat in batches so as not to crowd the pan and when they are well browned transfer to a slow cooker or ovenproof casserole

Step 3: Onions, Garlic and Deglazing the Pan

Once you've browned all of the meat thinly slice the onion and crush the garlic and fry this gently in the pan until softened. Transfer this to the slow cooker or casserole.

Deglaze the pan in 2 or 3 goes with the red wine making sure to get all of the caramelised meat and onion bits from the bottom of the pan and transfer these to join the meat.

Step 4: Putting It All Together

Add chunkily chopped veg to the pan along with the meat and onion. Add bay leaves, thyme and season

Step 5: Cooking

Cook this on low in your slow cooker for 3-4 hours or in a low oven (140oC) for 2 hours

Step 6: Serve

Swirl in a dollop of crème fraiche just before serving
