- Egg plant garlic dip gives a smoky flavour from a deliberate charring of the egg plant skin with inner flesh gets steamed to soften in the process.
-You can bake it or directly put on stove top.
-Although many dont like eggplant after seeing this you may surely try it.
-1 large eggplant
- Garlic cloves 6 to 7
- olive oil
- sliced green chillies
- sliced onions
- paprika or pepper
- sesame seed paste(optional)
- coriander powder
- lime juice

Step 1: Brush Egg Plant With Oil
-Brush egg plant with oil and put 3 to 4 slits long way over egg plant.
Step 2: Stuffing:
-stuff garlic slices and sliced green chillies in to the slits. open and stuff in all slits we made.
-Adjust green chillies according to your spice level.
-Add little olive oil in slits.
Step 3: Baking
-place egg plant in oven. To prevent juices from squeezing you can wrap in aluminum foil and bake.
-Bake at 200 degrees centigrade for 40 to 45minutes.
Step 4: Peel the Skin
-Allow to cool and peel the skin.
-Just chop with knife and then mash with potato masher.
-once peeled and smashed you may dont like the color and texture of it. But once you add all spices and flavours it will turn delicious with its smoky flavour.
Step 5: Add Spices
- Now add sesame paste . Adding sesame paste is optional. I added it for nice sesame flavour.
-Then add paprika,coriander powder and salt.
Step 6: Add Remaining Ingredients:
-Add sliced red onion or white onions.
-Finally add lime juice and give a mix.
-At last you can even add mayonnaise or some sour cream.
-Garnish with paprika or parsely.
-Serve with chips or pita bread.
