Introduction: Sour Cherry Pie

Step 1: Filling
4 cups pitted sour cherries
1 1/4 cups sugar
1/4 cup flour
1/2 tsp. cinnamon
Mix ingredients for filling. Bring to boil, let simmer until soften and thicken. Cool to room temperature
Step 2: Crust
You can use any double crust recipe you like. For this time I use whole wheat crust
4 c. whole wheat flour
1 tbsp. vinegar
1/4 c. water
1-1/2 c. butter
Mix all ingredients well and shape into 5 dough balls and chill for an hour.
Roll a dough out between waxed paper and lay it on pie pan.
Pour enough filling and roll out another ball of dough and place on top of filling
Seam edges to seal and poke every where or slice every where (for steam to release)
Bake at 425 F for 25 minutes, reduce heat to 350 F and bake for another 15-20 minutes
