Sous Vide Apple Pie

Step 1: Materials Needed

Materials that you need:

A) 1 Sous Vide Machine

B) 1 Large Pot with Water

C) 1 Rubber Spatula

D) 1 Large Ziploc Bag

E) 3 Large Bowls

F) Cling Wrap

G) Rolling Pin

H) 9-inch pie plate

Step 2: Items Needed

Ingredients for Pie Filling

A) 4 Large Apple: peeled, cored and diced

B) 2 tablespoons all-purpose flour

C) ½ teaspoon ground cinnamon

D) 2 and ½ tablespoons lemon juice

E) ½ and ¼ cup and white sugar

Ingredients for Pie Topping

A) 1/2 cup all-purpose flour

B) 1/2 cup butter

C) 1/2 cup white sugar

Ingredients for Pie Crust

A) 1 and ¼ cups all-purpose flour

B) ¼ teaspoon salt

C) ½ cup butter, chilled and diced

D) ¼ cup ice or cold water

Step 3: Preparing the Filling

A) Wash and Peel all the Apples.

B) Cut out the core of the apples.

C) Cut the Apples into medium size cubes.

D) Then Mix the Apples with:

  • a) Flour
  • b) Cinnamon
  • c) Lemon juice
  • d) Sugar

Step 4: Prepare for and Cook in Sous Vide

A) Place the Apples into the Ziploc Bag.

B) Vacuum Seal the bag (Suck Out all the air in the Bag) by putting the bag under water for vacuum like effect. When placed in the pot of water proceed to push all the air out of the bag. If you have a vacuum sealer use this for most effective outcome.

C) Place the Sous Vide Machine in a Large Pot of Water.

D) Set the Sous Vide Machine at 165F.

E) After the water reached 165F, place the bag of apples into the water for 2 hours. (The bag needs to be completely submerged the entire time of cooking.)

Step 5: Preparing the Crust

A) Use a large bowl, to combine flour and salt.

B) Put Diced Butter in, and mix until the mixture resembles Coarse Crumbs.

C) Add in the cold water [without ice] into the mixture.

D) Stir the mixture until the mixture can form Ball.

E) Places the ball on to cling wrap and wrap it.

F) Then put the wrapped Ball of mixture into a refrigerate for 4 hours or freezer for 30 minutes. Just to make sure the dough is cold and firm before rolling.

Step 6: Preparing the Topping

(Making Time: 5 minutes)

A) Mix sugar and flour.

B) Cut butter into small cubes and mix together with flour and sugar.

C) Put the mixture on top of the pie.

Step 7: Preparing the Pie for Baking

Preheat oven to 425F

(Prepare Time: 15 minutes)

A) Take the dough of pie crust out of the refrigerator.

B) Put some flour on top of a counter top. Then place the dough on top adding some flour on top of the dough.

C) Use a rolling pin to roll out the dough to fit a 9-inch pie plate.

D) Place crust in pie plate and trim the edges to fit the plate.

E) Press the dough evenly into the bottom and sides of the pie plate

F) Pour the readied apples into the pie crust.

G) Add the pie topping onto the pie.

Step 8: Bake the Pie

Warning: Oven is Hot

A) Places the Pie into the oven for 1 Hour or until is topping and crust have a golden brown color.

B) Remove the pie from oven when the pie is done cooking.

C) Place the pie on top of a cooling rack to cool down for 15 minutes.

D) Serve Warm or at room temperature.

    Is there a clear advantage to cooking the filling this way? Does it come out extra delicious? Otherwise, great 'ible!

    It comes out almost like an apple sauce, but because it sits in the bag with everything for so long I found it to be more flavorful than any other apple pie I've ever had.
