Spaghetti with Garlic, Olive Oil & chillies
(Spaghetti Aglio olio & pepperoncino)

Step 1: Ingredients:
- 400g Spaghetti
- 12 garlic cloves
- 100 ml Extra Virgin Olive Oil
- 1 Chili pepper
- 3-4 Table spoons fresh Flat leaf parsley, finely chopped
- Parmesan cheese (or similar)
Step 2: Method:
Cook the spaghetti according the packet instructions.
Meanwhile, in a large pan heat the olive oil and add finely chopped garlic. Sauté for about a minute(low to medium heat). Keep an eye on the garlic as it can burn very easily.
Add finely chopped fresh flat leaf parsley & chopped chili and sauté for another minute or so. (Note: add only as much chili as you can eat. There is nothing worse than a delicious dish that cannot be consumed for its extremely high amount of chillies put in. The hotness of each chili pepper is different so I suggest use the ones you are familiar with or start with really mild ones)
Pour a few spoons of the spaghetti water in the pan and cook for another minute.
Drain the spaghetti, and add them to the pan. Mix them well with the olive oil, parsley, garlic and chili.
Transfer to plates & serve with Parmesan cheese.
