Introduction: Spanish Rice Salad

About: I am married with two children. Spring, summer, and fall are my very favorite times of the year. I enjoy working in the yard, sewing, cooking, quilting, gardening, and creating. I do this to keep my sanity.

I had been visiting my sister last summer and she made this incredible Spanish rice salad.  I was so surprised when she told me the ingredients.   This has become one of my weekly favorite meals to make.  It is so good!   Every time I make it for someone new they always comment about how good it was.  You must try it.  We usually make the rice from scratch but I did not have time today.  I will write up a recipe for it in another tutorial.  I must say though this box mix was still very good for the Spanish rice.  

Step 1: Recipe

Here is the recipe: 

  • 1 Box of Spanish rice
  • 1 Can Black olives
  • 1 Bottle Louisiana Hot sauce
  • 1 Can Spam
  • 1 Small Package Parmesan cheese
  • 1 Lemon cut into wedges
  • 1 Box fresh Spinach  leaves
  • 4 Chopped tomatoes
  • 1 Chopped cucumber
  • 1/2 Chopped onion
  • 1 Shredded carrot
  • 1/2  Sliced  yellow squash
  • 1/2 Chopped bell pepper

Step 2: Combine Salad Ingredients

Combine all the salad ingredients and the cheese (reserving 1/2 can of olives for the rice.)
Add a dash of garlic salt to mixed salad.
A dash of sea salt.
Mix well.
Place 3 squash rounds in the center with olives on top.
Set aside while you are making the Spanish rice.

Step 3: Make the Rice

Follow the directions for making the rice.

While the rice is cooking cube the Spam.

Step 4: Brown the Spam

It is time to brown the Spam in a skillet.

Step 5: Combine the Rice and Olives

Combine the cooked rice and olives to the Browned Spam.
Mix well.

Step 6: Place the Rice and Spam on the Plate

Place the rice and Spam mixture on the plate.
Sprinkle with hot sauce.
Add salad.
Garnish with lemon wedge.
Season to taste.

Step 7: Sunshiine's Final Thoughts

I know there are people who don't care much for Spam.  I am one of those people.  I must say though this dish is fabulous.  I don't mind eating Spam one day a week because I eat well and don't need to worry about the processed meat.  You could probably substitute chicken.  The salad is great even without the meat.  Any salad that  would go with a Mexican food item will work with this recipe.
