I have had the idea for a few days to make sweet potato tempura after I saw it on a menu in Atlanta. When I looked through my fridge to see what else I could fry I saw a couple of Honeycrisp apples, and that's when inspiration struck. I could make spiced batter and could try to replace the water with apple cider. I think it turned out really good.

Step 1: Prepping the Batter
Mix together some flour, I used about a cup, with some ground cinnamon and ginger. I added the spices until this mixture smelled like apple pie. Put some ice in a container with some apple cider and put that aside. Do not mix these until you're ready to fry
Step 2: Prepping the Fruit
Peel all of the fruits that you plan on using, I used apples and bananas, and any thing else you may want to fry, like sweet potatoes. Cut the fruit/ vegetables into slices about the size of a thick potato chip. For fruit that oxides sprinkle some fruit fresh or lemon juice on them.
Step 3: Getting Ready to Fry
Start to heat a fairly deep wok of oil on high heat, and then mix the cider and 2 egg whites into the flour. It's okay if it is a little lumpy or if the ice cubes get in, but try not to over mix it. Add enough cider to make it thin enough for it to drip off the fruit, but not thin enough to all slide off. It will be sort of like pancake batter. Throw whatever you want to fry into the batter and when the oil gets hot, shake off the excess batter from the slices and place them in the oil. Don't throw them in or you will splash it and burn yourself (trust me), and try to keep the slices separate in the oil so they don't stick together
Step 4: Frying
By the time you get the last slice in the oil, you can probably flip the first slice you put in with a slotted spoon. This will be darker than normal tempura because of the spice and cider. When the pieces turn brown and crispy, drain them with a slotted spoon and move them to a paper towel.
Step 5: Finishing Up
When I first fried the fruit I tried it just like it was, and it was good. But, on the next batch, i sprinkled some cinnamon sugar over the fruit. That made it fantastic, so I would recommend doing that.
