2 cups corn whole kernel
1/4 cup Red Bell Pepper diced
1/4 cup Green Bell Pepper diced
1/2 cup onions, green, red and yellow, minced
1/4 cup tomatoes, minced
1/4 cup jalapeno peppers
2 tablespoon lime juice
2 tablespoons Cilantro
2 teaspoons sugar
1 tablespoon Apple Cider or Red Wine Vinegar
1 tablespoon olive oil
1/4 teaspoon Cumin
1/4 teaspoon Cayenne Pepper
Salt & Pepper to taste
1. Combine all ingredients and chill for several hours before serving.
Sometimes I have it as is or I take a little bowl and add some pomegranate and Monterrey Jack Cheese. Great side with BBQ or any picnic lunch
