Introduction: Strawberry Cheesecake Ice Cream

Everybody's favorite dessert but way cooler!

Enjoy it in those hot summer days with the people you love or make a batch just for yourself!

There are two ways to prepare it, one involves an Ice-cream maker, but if you don't have one, do not despair! Not everything is lost! Keep reading to find out!

Step 1: Ingredients!

Check out the ingredients!

For the base:

300 g of Cream Cheese

1 cup of Milk (I used whole milk, but use whichever you want!)

1 cup of Heavy Cream

1 cup of Sugar (Use the granulated one, brown sugar will turn your mix, well... BROWNISH)

1 teaspoon of Vanilla extract (Be vary careful with the vanilla, if you use more than you need, it will end tasting bad... trust me.)

1/2 teaspoon of Salt

1/4 cup of Graham crackers (If you can't find graham crackers, you can always use María cookies or something similar!)

For the Sauce:

1 cup of thinly sliced strawberries.

2 tablespoons of granulated sugar

2 tablespoons water

1 teaspoon cornstarch

1/4 teaspoon vanilla extract

You've got them ingredients now... Get to the steps now!!

Step 2: Work That Base!

You need to make that cheesecake base thick and tasty!

Throw all the base ingredients into a blender and set it to a slow setting until everything is evenly mixed.

REMEMBER: Be careful with the vanilla! I can't stress it enough.

For extra flavor, add some lemon zest before mixing everything. It will give some punch to it!

Then pour the mix to a bowl, cover it with plastic wrap and let it rest in the refrigerator for at least an hour.

Step 3: Sauce Time

There's no strawberry cheesecake if you skip the sauce!

Use a small-medium saucepan

Then bring the strawberries, sugar, water and cornstarch to a boil for 5 minutes or so, or until the strawberries are cooked down an the mixture seems thick enough.

Remove for heat and add the vanilla, then let it cool for +15 minutes.

Here is where those with an Ice Cream maker and those who do don't own one part ways...

Step 4: C'est Tout!

If you own an Ice cream maker, just add the cold base to it and follow the instructions of your machine. it varies depending the manufacturer. Once churned, add a layer of strawberry sauce and smashed graham crackers/María cookies, then freeze overnight.

If you don't own one, then just freeze the mix overnight. Once it is ready, take it out the freezer and let it rest for 10 minutes or so, then add the sauce and crackers and enjoy!

For better presentation, garnish with a couple strawberries!
