A layer of white chocolate cheesecake on top of a strawberry layer with a chocolate cookie crust. No baking!!
Topped with fresh strawberries and a raspberry glaze. A great spring and summer dessert!

Step 1: Make the Crust
Crush Oreo cookies or use a food processor until they are fine crumbs. Mix 1 1/2 cup of cookie crumbs with 1/4 cup melyed butter. Press into a springform pan. Refrigerate for at least 30 minutes.
Step 2: Puree Strawberries
Puree 8 oz. of fresh or frozen strawberries in a blender. Pass it through a fine strainer to remove the seeds.
Step 3: Make Strawberry Layer
Whip 1 cup of whipping cream until stiff peaks form. Set aside.
Beat 8 oz of cream cheese and 1 tbls sugar until smooth
Stir in strawberry puree until combined.
Fold in whipping cream.
Spread onto cookie crust.
Step 4: Make White Chocolate Layer
Melt 1 1/2 cups of white chocolate chips in the microwave just until melted. Let set until it reaches room temperature.
Whip 1 cup of whipping cream until stiff peaks form.Set aside
Beat 8oz. of cream cheese until smooth.
Mix in 1 tsp. vanilla extract and the melted white chocolate until smooth.
Fold in the whipped cream and spread onto the strawberry layer.
Cover with plastic wrap and refrigerate over night.
Step 5: Add Strawberries and Make Glaze
Remove cheesecake from pan.
Wash fresh strawberries and place around top of cheesecake
Put 1 jar of seedless raspberry jam into a saucepan and heat until the jam has melted. Brush the glaze onto the strawberries and drizzle around the top of the cheesecake.
