Super Fast Delicious Egg Salad

Making egg salad can be tedious boil the eggs, cool the eggs, peel the eggs, well not my way!. I like to do things efficiently so follow my process and don't knock it till you've tried it. Think outside the box or the shell in this case.

Step 1: Step 1

You will need:

Frying pan or egg poacher
Bowl
Sieve or Collander
Eggs
Mayonaise or Miracle Whip whatever is your preference
Green or spring onions
Salt
Pepper

Step 2: Step 2

Bring the water to a boil in the fry pan or egg poacher turn it down to simmer.
if using the fry pan add a table spoon of vinegar to the simmering water this keeps the eggs from spreading out.
Put in the eggs and poach them hard.

(I bet you can see where we are going with this now!)

Step 3: Step 3

Once the eggs are done put them into a seive or colander
and rinse them under cold water.

To kool them quickly let stand 5 mins in cold water topping it up as necessary
or for superfast cooling add ice to the pot of cold water and let stand.

Then drain off the water voila! your ready to make your egg salad.

If you prefer pat them with a paper towel to remove extra moisture.

no time wasted peeling eggs! And just because they are not oval does not matter they will be mashed up anyway.

Step 4: Step 4

Add the eggs to a bowl and mash them up
add chopped onions
add mayo
salt and pepper to taste

Enjoy


I use this process all the time whenever boiled eggs are needed in a dish.

    What a great idea! This is what I love to see in an instructable, something that makes you say "why didn't I think of that?" and is simple, cheap and easy. Bravo!

    wow. this is one of those "duh, GENIUS!" types of things... so simple, yet so smart! Im gong to have to do it this way from now on.

    Yum! I've only ever used hard-boiled eggs. This is great! I grew up putting sweet pickle relish in my egg salad. But I never have that on hand any more. Green onions seems like a perfect solution.

    I must admit I nuke my eggs most of the time before making an egg salad out of them. They cool down enough on their own while I get the other ingredients ready. (and to show how lazy I am I don't even cut them up and call it a deconstructed egg salad :))
