Introduction: Super Fiber Cobbler

I am not much of a baker…

I consider myself pretty accomplished at cooking eggs and hamburgers. When I lost my right kidney in 2012, the situation forced me into being more creative with my diet. My doctors are always on me (in a good way) about increasing dietary fiber. The following recipe is a result of experimentation. The recipe turned out really well and I felt like sharing.

Fruit Mixture:

6 oz. dried prunes

2 oz. dried dates

2 oz. dried cranberries

2 large apples

1 cup water

1 tbs. cinnamon

Cook fruit and in sauce pan with the water for 15 minutes to soften and rehydrate fruit.

Cobbler dough:

1 package of muffin mix (any type)

¼ cup flax meal

¼ cup chia seeds

1 ½ cups oats

1 ¼ cups skim milk

1 tbs. cinnamon

2 tsp. clove

1 tsp. nutmeg

1 tsp. ginger

Bake at 400*F for 30 minutes

Step 1: Fruit

Measure and load the sauce pan with all of the fruit, water, and cinnamon.

Step 2: Cobbler Dough

Assemble all of the dry ingrdients first before adding the milk. Use is a spoon to mix everything up.

Step 3: Put Fruit and Dough Together

Use Pam spray on the oven safe dish.

Put the fruit down first and then glob on the dough. The top becomes a free form shape, so do not worry about making it look perfect...it's cobbler.

Bake at 400*F for 30 minutes.

Let sit for 20 minutes.

Enjoy.
