Introduction: Zucchini Ki Sabzi

Sabzi?
The vegetables cooked in gravy is called Sabzi.

This is my first instructables my name is Kulwinder Singh I am a long haul trucker. Since 2003 I am in North America driving trucks, I became Type II Diabetes due to North American lifestyle(mainly food wise), always on the road eating junk end up being 220lbs. I took charge of my health and went back to North Indian(Punjab) diet and the results are here. I am 168lbs in 18 months no diet no exercise and no pills Pro Metformin (for diabetes)

Sabzi is the most integral part of the Punjab Region cuisine due to being the most fertile land in the world.

Ingredients.

1 tbsp- oil
6 zucchinis- cut lengths wise and half moon
1 inch ginger- minced
4 garlic cloves- minced
15 to 20 cherry tomatoes- you could use normal tomatoes also(I only buy cherry cause they have a better shelf life than others)
3 medium sized onions I used Spanish(less for cutting and crying) 2 onions chopped and 1 onion sliced.
2 tsp Cumin Seed.
1 cup fresh coriander.

Spices.

1 tsp Garam Masala.
1 tsp Coriander Powder.
1 tsp Turmeric.
1/2 tsp Cumin Powder.
1 1/2 tsp of salt.
1/2 tsp pepper.

Step 1.

In a 10" skillet on a medium heat 2 tbsp oil than mix 2 tsp of cumin seeds, garlic & ginger keep mixing cooking until light brown.

Add 2 chopped onions and cherry tomatoes cover, let it simmer for 10 to 20 minutes (keep stirring in between).

Once it become a caramelized gravy add all the species except salt and pepper. Keep stirring and 1/2 cup of water let it boil while stirring.

Than add zucchini and 1 onion sliced add salt and pepper and 1/2 cup fresh coriander cover and simmer for 15 to 25 min (stir in between).

In the end put the remaining 1/2 cup fresh coriander serve with cumin fried rice, roti or naan.
