It's that time of the year again, lot's of people searching for that perfect pumpkin pie recipe to show off at their next family gathering. Try out The Best Easy Pumpkin Pie Recipe that I make, it could be a contender. All I've ever had was store bought pumpkin pies so this year I tried my hand at making one myself and I have to say I will never buy one again. Fresh is always better. Step 1: Ingredients for the Crust

Ingredients

  • 1 3/4 cups of flour
  • 1/4 cup chilled butter 1/4 plus
  • 1 tbsp of cold water

Equipment

  • medium mixing bowl
  • a whisk
  • grater for the butter
  • pie pan
  • and a fork or pastry blender
  • a rolling pin

Step 2: Ingredients for the Filling

Ingredients

  • 2 cups of Pumpkin Puree (see below for video link)
  • 1/2 cup brown sugar
  • 2 1/2 tsp pumpkin pie spice or (1 tsp ground cinnamon, 1/2 tsp ground Ginger, 1/2 tsp ground all spice and 1/4 tsp ground nutmeg)
  • 1 small (300ml) can of sweetened condensed milk
  • 3 eggs
  • 1 tsp vanilla extract

Step 3: Step 1: the Crust

In a medium mixing bowl, whisk together flour and salt. Grate in the butter and mix it well with a fork or pastry blender until you get little pea sized crumbs. Add the water a little at a time while stirring until a dough ball starts to form then work it a little with your hand. You may want to let it rest for a while (15 minutes) before rolling out. Using a rolling pin, roll out the dough on a floured surface until it's about 1/4 inch thick. Cover the the pie pan with the rolled out dough, leave a little extra dough over the sides to allow for shrinkage. Set aside.

Step 4: Step 2: the Filling

In a medium mixing bowl with a whisk, mix together the pumpkin puree, condescend milk, sugar, vanilla and eggs. Once that's all well whisked together, pour your filling into the prepared pie shell.

Step 5: Step 3: the Baking

Bake the pie in a oven set to 375 degrees for about 50 minutes. Once it's set, you can tell by how firm it is in the centre, you can trim the excess dough with a knife.
