It's our one year Blogiversary as the Delightful Vegans! And as a birthday treat, we skipped the cake, and instead made... The Most Epic Vegan Rocky Road EVER! Honestly, this stuff is insane!
But before I give you the recipe for this awesomeness, let me tell you how we got started as The Delightful Vegans!
Last year in April (2016), we were watching too many movies. We felt like we were wasting time and not being productive. So we decided to do a thing we made up called 'No Movie May'. Well, we were sitting around one Saturday night during our No Movie May and I said to Josh. 'Hey, do you want to start a blog?', and within an hour, it had all been set up, and we'd even posted our first recipe! (haha, don't laugh - all bloggers first recipes are pretty bad! :-P)
We first set up our hosting with another provider (Boo!), but eventually changed to Bluehost (Yay!), because they are awesome and one of the best in the business.
We got a bit addicted, and our creativity and photography skills have improved dramatically in the last year! In this time, we've posted almost 100 recipes, 14 vegan travel stories, a few great round ups of collated recipes, we've been featured in two printed magazines, on the Huffington Post, on numerous other blogs, have almost 1000 email subscribers, and even created our Vegan Ebook - Vegan Food Magic!
We're still excited to keep creating yummy and mouth watering recipes for you all, and thanks for sticking around, supporting us, giving us feedback, and making our recipes!
Now, back to the Rocky Road! Some of the ingredients may be hard to find, but you can always go to the 'Cruelty Free' shops or order online!
It has the perfect amount of everything - I also threw in some honeycomb and white chocolate just to make it even more special. I let the dark chocolate cool a little before mixing all the ingredients together, as I didn't want the white chocolate to melt.
Step 1: What You Will Need
40g Vegan Honeycomb (roughly chopped)
50g Vegan White Chocolate (roughly chopped)
1/2 cup of Macadamia Nuts
1/2 cup of Hazelnuts
1 cup (75g) Vegan Mini Marshmallows
1/2 cup Desiccated Coconut
235g Organic Vegan Dark Chocolate (melted)
Grill the macadamias and hazelnuts for about 10 minutes on medium heat, or until slightly browned. Keep an eye on them so they don't burn! Let them cool and chop roughly if desired.
Put the honeycomb, white chocolate, mini marshmallows, desiccated coconut and the cooled macadamias and hazelnuts in a bowl and mix well.
After you have melted the dark chocolate let it cool slightly so it doesn't melt the white chocolate. Then pour this into the rest of the mixture and mix through thoroughly.
Line a 20cm x 15cm baking tin or container with baking paper. Pour the Rocky Road mixture into this and even it out.
Put in the fridge and it should be ready in about an hour! Enjoy The Most Epic Vegan Rocky Road Ever!!! It won't last long!
