Seems simple but quite filling for a healthy breakfast!
Step 1: Ingredients and Method
2 eggs, hard boiled
3/4 c creme fraiche
2 tbsp each chopped fresh basil, chives, parsley
salt and pepper to taste
Mix together the ingredients for sauce, set aside (cool in the fridge if you'd like)
Either with knife or egg slicer, slice eggs into thin slices, set aside
With a knife, slice tomatoes where as each slices should be the same number of the egg slices. Do not slice through tho, thus you would make a fan like tomato.
Fan open tomatoes and sprinkle with salt then insert egg slices into each slit.
Place on serving plate and serve with prepared sauce.
This makes two servings!
Note: serve as with the sauce and can also be served with salad of your choice for a quick lunch!
