This is a simple one but really tasty. It even makes a great topping for salads, tacos, whatever. I love it by itself.
1 cup diced Tomato
1/2 cup diced Red Onion
1/2 cup shredded or diced mozzarella
I/4 cup Italian Dressing
2 – 3 Chopped Basil leaves (if desired)
Combine all ingredients and mix well. Refrigerate for at least 4 hours before serving
You can substitute White or Yellow Onions if desired. Even a little shallot is good especially when using Yellow onions. It also works well with Sharp White or Yellow Cheddar Cheese. The same goes for the Tomato's. Any variety will work. Pick the ones you like best.
I like to use Good Seasons or Goya salad dressing packets with Red Wine and Olive Oil. Maybe a splash of White Balsamic too.
