Tomato rice is one of the most popular dishes in south India. Pople prefers eating in lunch and dinner. Some of the busy office employees also cooking this dish for breakfast as it takes fewer ingredients and comparatively less time to cook it.

Step 1: Collect All the Ingredients

Ingredients (1 cup = 250 ML)

3 tsp oil1 tsp mustard1 tsp cumin / jeera½ tsp urad dal½ tsp chana dalfew fenugreek / methi1 inch cinnamon / dalchini4 clovesfew curry leavesfew cashew / kaju1 onion finely chopped1 green chilli slit¼ tsp ginger paste2 tomato finely chopped¼ tsp turmeric / haldi½ tsp kashmiri red chilli powder½ tsp coriander powder½ tsp salt2 tbsp mint / pudina chopped2 cup rice cooked2 tbsp coriander finely chopped

Step 2: Step 2

firstly, in a large kadai heat 3 tsp oil and splutter tempering.

Step 3:

also, saute few cashews until golden brown.

add 1 onion, 1 green chilli, ¼ tsp ginger paste and saute well.

Step 4:

now add 2 tomatoes and saute until tomatoes turn soft and mushy.

Step 5:

additionally add ¼ tsp turmeric, ½ tsp chilli powder, ½ tsp coriander powder, ½ tsp salt and 2 tbsp mint leaves.

Step 6:

saute and cook for a minute.

Step 7:

furthermore, add 2 cups cooked rice and mix gently.

Step 8:

cover and simmer for 5 minutes to absorb all masala.

Step 9:

finally, serve tomato rice with raita of your choice.

Now you can pack in a silvered plastic bag or you can pack in a thermo packed box. It tastes good when served hot.
