This week, I took out all the eggs and dairy, and replaced it with GIN! What a wonderful plan. Inspiration came from a Vegan Cupcake book borrowed from a friend (hey Alison, I promise to give it back...) and I am now obsessed with their delicious boozy spongey flavour and texture. Mostly gin, some tonic, vegan butter, sugar, flour, oil, 1 lime, shortening, soy milk, apple cider vinegar, baking powder and baking soda!
250ml of soy milk | 1 tsp of Apple Cider Vinegar | 350g plain flour | 2tbsp corn flour | 1/2 tsp baking powder | 1/2 tsp baking soda | 80ml of rapeseed/canola oil | 180g of caster sugar | Gin | Tonic | 1 Lime (zest, keep the lime)
