Introduction: Vegan Panettone

For Christmas hampers this year we made two kinds of panettone, eggless and vegan ones. Either turned out well and liked by the receiver(s) ^_^

Merry Christmas everyone!

Step 1: Ingredients & Baking

1/2 c dairy free white chocolate chips (I purchased via amazon, couldn't find local)

1/4 c semi-sweet chocolate chips (such as Great Value or President's Choice)

1 1/4 c chopped mixed dried fruits, nuts and seeds such as tomato, mango, pineapple, cranberry, raisin, golden raisin, sunflower seeds, pumpkin seeds, cashew, peanuts, and prune (most are Trader Joe's brands and D Gourmet Kosher)

Dissolve 1/2 c sugar (Canadian sugar is vegan, esp. Redpath brand) in 1 c luke warm almond milk, then sprinkle with 1 tbsp yeast. Let stand for 10 mins

3.5 c flour

1/4 c solid coconut oil

1 tsp vanilla essence

1/2 tsp lemon juice

Grated rind of 1 orange

Baking

Mix flour, coconut oil, rind, vanilla essence and lemon juice in a stand-up mixer with dough hook attached

Pour in bloomed yeast while keep kneading

Add in fruits, nuts, seeds and chocolates

Cover dough with cling wrap and let stand for an H Line an 6 inch round pan with parchment paper, bottom and sides

After an hour, shape dough round and place it on the pan.

Let stand for 30 mins

Brush top with coconut oil/vegan butter/margarine/shortening and sprinkle with sugar

Bake at 375 F for 45-55 minutes (should sound hollow when tapped) Cool on cooling rack
