Introduction: Vegetable Sambar (Spicy)

The Sambar is an integral part of any South Indian Meal. You may say that it is the heart of the meal also . Most of the meals revolve around different types of sambar.

So in this Instructable, I'll show you the recipe to make this tasty veggie sambar. This is best tasted with white rice and a salad or a curry. So let's get cookin !!

Step 1: The Ingredients

For this tasty recipe, you need to make sure that the following is in your shopping cart.

  • Toor Dal (Pigeon Pea Lentils)
  • Tomato
  • Any vegetables of your choice (2 or 3)
  • Oil
  • Curry Leaves
  • Sambar Powder
  • Salt
  • Turmeric Powder
  • Red Chilies
  • Mustard

Step 2: Clean the Dal and Veggies

The First step is to clean the Lentils thoroughly with water. Also wash all the vegetables under tap water directly to remove all the dirt.

Once you've cleaned the veggies, chop them down nicely according to your required sizes. Now we're ready to start cooking !!

Step 3: Pressure Cook the Dal

The dal is what gives the sambar it's thickness and texture. So first we need to pressure cook the Dal. Before closing the cooker lid , add a little bit of oil and a teaspoon of turmeric. Also add the chopped tomatoes with the dal for cooking.

Pressure cook it for 4-5 whistles. Then keep it aside.

Step 4: Fry and Cook the Veggies

While the Dal and is being pressure cooked, heat 2 Tablespoons of oil in a frying pan. Once the oil is heated up, add 1 Teaspoon of mustard into it. Wait till the cracking stops and then add curry leaves.

Now add in all the vegetables you have chopped, into the pan. Saute it till the veggies are properly cooked.

Step 5: Mix Em Together

Now open the pressure cooked dal and mash it up nicely. Transfer it into a new container and add the cooked vegetables. Turn on the stove and keep it at medium heat.

Now add 2 Tbsp of sambar powder, 1 Tbsp of Chili Powder, Salt as required and give it a nice mix.

Bring the contents to boil at medium heat.

Step 6: Serving

Once the sambar begins to boil, on a small pan, heat some more oil, and add some red chilies into it. Now pour this mixture into the boiling sambar. The sambar is now cooked and ready to be served.
