Don't feel left as the vegetarian at a BBQ or settle for the plain veggie burger that is sometimes available. These kabobs are spicy, super-fruity and perfect for a summer evening.
Fruits and Veggies to Skewer
Gardein Beefless Tips
2 cups coconut water
1/2 cup coconut milk
3 Tbs lime juice
2 Tbs soy sauce
1 Tbs rice vinegar
1 Tbs agave
1 tsp chili powder
1/2 tsp cumin
1/4 tsp pepper
3 cloves garlic, minced
1" piece of fresh ginger, minced
- Chop up fruits and vegetables into about 1" pieces
- Mix all marinade ingredients in a bowl
- Add fruits, veggies and meat substitute
- Cover with plastic wrap and leave in the fridge overnight
- Skewer and grill for about 15 minutes
- Sprinkle with toasted coconut
- Serve with rice
