Walnut & Brown Sugar Oatmeal Cookies

Introduction: Walnut & Brown Sugar Oatmeal Cookies

About: Just a lucky girl enjoying her two passions: teaching and food. I'm a practicing foodie (whatever that means), amateur decorator, DYI pro and an organized mess.

These have to be the yummiest Oatmeal Cookies I have ever had!

The Brown Sugar gives these cookies such an earthy country flavor, that's impossible to resist. Even if you think you don't like Oatmeal Cookies, you at least have to give these a try. They are sweet, plus the crunch of the walnuts is totally unexpected. They're not gooey, they're crunchy, perfect with a glass of your favorite milk.

You don't have to use the two different flours, you can just use whatever you have on hand. But if you use all white flour, the cookies will be paler in color.

These cookies are obviously not Vegan, but you can substitute the egg with an Egg Replacer. What may also work, is add one teaspoon of vinegar plus a tablespoon of water to the mix, instead of the egg.

Step 1: Ingredients

3/4 c Butter
1 c Brown Sugar
1 Egg
1 tsp Vanilla

1/2 c Flour
1/4 c Whole Wheat Flour
1 tsp Baking Soda
1/2 tsp Baking Powder
1 tsp Cinnamon
1/8 tsp Nutmeg (optional)
3 c Oats
1/2 c Walnuts

Step 2: Method

-Cream the butter and sugar together with an electric hand mixer.
-Add the egg and vanilla, and mix well.
-In a separate bowl mix the flour, baking soda, baking powder, cinnamon and nutmeg.
-Add the dry mix to the wet mix.
-When everything is well incorporated, start adding the oats cup by cup. Then add the chopped walnuts.
-Make small balls and press them a little until they are about half an inch thick.
-Bake for 12-15 minutes at 350 degrees.

These cookies are fabulous! I have been looking for a crunchy, tasty oatmeal cookie recipe and these are perfect! I didn't have walnuts, so I used pecans and I may add raisins next time, but I will definitely be making these cookies again and again! Thanks for sharing.

To make these vegan either use vegan butter or coconut oil, and replace the eggs with a commercial egg replacer or flax seeds.

Oatmeal cookies are not normally a cookie I would enjoy, but when my fiance asked me to bake some I searched and found this recipe. This is the third time I've baked them this month! Very good and very easy! Thanks
