Intro: Yeast Free Pull-apart Rolls
For my first Instructable, I'd like to share this recipe with you all. This yeast free bread is made with ingredients that are most likely readily available in your kitchen. It also takes less time, since the bread doesn't have to be proofed beforehand. The resulting rolls in this recipe are fine on their own, but you can also add and/or make substitutions to change it up a bit. Let's get started!
Step 1: Ingredients
- 1¾ cups all-purpose flour (do not round up to 2 cups!)
- 3 tbsp sugar
- 1 tsp salt
- 2 tsp baking powder
- 2 tbsp salted butter (melted and cooled)
- ½ cup + 3 tbsp milk (at room temperature)
Step 2: Tips Before Preparation & Baking
- Herbs or spices can be added to the dry ingredients, or sprinkled on top before baking.
- I’ve only made this bread using milk with 1% fat. If you’d like to use whole milk, I’m sure it would yield similar results. Plain yogurt might also be a good substitute. Use equal amounts if substituting.
- Other oils could be substituted for butter. See what combinations of flavors work for you.
- If using oils or fats that solidify (like coconut oil or vegetable shortening), make sure they are melted.
- You can put fillings into the bread as well. Some that I’ve tried are cheese and sweet bean paste.
- Do NOT round up the flour to 2 cups. The rolls could end up having a “doughy” flavor.
Step 3: Getting Things Ready
1. Preheat the oven to 350° Fahrenheit.
2. Line square baking pan (8x8x2 in), or round baking pan (9x2 in) with parchment paper.
- Grease the bottom and/or sides of pan with butter (not the melted butter) or cooking spray if parchment paper is unavailable.
- To make the parchment paper stick to the sides of the pan, grease a bit of the corners then press into the pan.
Step 4: Preparing the Dry Ingredients
3. Combine the dry ingredients in a medium bowl: all-purpose flour, sugar, salt, and baking powder.
- Herbs, spices, or other dry flavorings can be added into the bowl.
4. Whisk the dry ingredients together until well blended.
Step 5: Adding the Wet Ingredients
5. Using your hands or a spatula, create a well in the middle of the flour mixture.
6. Pour the milk and melted butter into the middle.
7. Mix with spatula until it becomes a crumbly consistency.
- Make sure to scrape the bottom of the bowl to get the rest of the flour into the mix.
Step 6: Kneading the Dough
8. Knead the dough with your hands until all ingredients are combined. The dough will pull from the sides of the bowl and be sticky.
- Try not to knead the dough any more after ingredients are well combined.
- If you’re having trouble kneading in the bowl, transfer the dough to a pastry board or tabletop sprinkled with flour and follow Step 8.
- The dough will appear a little lumpy. That’s okay. Once they are rolled into balls, there shouldn’t be too many visible lumps.
Step 7: Rolling the Dough
9. Divide the dough into equal parts (usually nine parts if using square pan), then roll into balls, and arrange them in the baking pan.
- Add any fillings into each ball before rolling.
- Sprinkle desired toppings onto the dough balls.
Step 8: Baking & Results
10. Bake the rolls for 20-25 minutes.
11. Remove from oven. The baked rolls can be left to cool in the baking pan or removed (the parchment paper also helps with ease of removal).
*I sprinkled some powdered cheese on the rolls before baking.
