Introduction: Yoghurt Tomato Pancaces With Mushrooms
I just made up these pancakes, and they were really yummy!
I started cooking frequently about a year ago and got a lot of recipes from instructables, untill today.. i finally created something myself! First instructable, first recipe, wohoo! :O
Step 1: Ingredients
1 cup of yoghurt,
1 cup of flour,
3/4 tsp of baking powder,
2 cloves of garlic (or as much as you want),
1 1/2 tsp of roughly chopped rosemary,
1 tsp of dried oregano,
4 medium sized ripe tomatoes (~2 inches diameter),
1 tsp of lemon zest,
1 tbsp of butter,
some dried cilantro;
if you have fresh herbs, thats preferred of course! i only had fresh basil and rosemary.. i dont know how dried rosemary would react to frying, you'll have to try.
Step 2: The Sauce..
Chop garlic and rosemary.
Then grab a small saucepan, put it on low to medium heat and add some olive oil. when its hot enough, throw in both garlic and rosemary and add a large pinch of salt. stir once and let it fry quietly for a minute or two. be careful not to burn the garlic, happens fast, depending on how small you cut it.
meanwhile, cut the tomatoes into small pieces. add them to the pan with all the juice and innards and let the whole thing boil down for 5-10 minutes untill its a thick sauce. add pepper, lemon zest and oregano about a minute before you take it off the stove. let it cool down.
Take a medium bowl and mix together yoghurt, flour, baking powder, egg. this works with a fork just as well as with an electric hand mixer. though if you dont have one, you might want to mix the dry ingredients first, then add them to the yoghurt and whisk in the egg to make sure you get a homogeneous mass.
Then add the (cooled down) tomato sauce to it.
Take a pan, put in on medium to medium high heat, add some oilve oil when its hot, and make pancakes. not much to explain!
As you know, you can put a lot of things on top of pancakes, like bacon, fresh tomatos, cheese, whatever...
I just sliced some mushrooms and chopped an onion, then took a saucepan, let a generous piece of butter melt down in it, added the mushrooms and stirred them to get nicely covered in butter from all sides. made some space with a wooden spoon, added the onion and let it fry a bit. then mixed everything together, added a bit of water, salt, pepper, and half a tsp of dried cilantro. Stirred and let the water boil away.
some grated parmesan, red balsamico and fresh basil leaves on top..
