Introduction: Zucchini Parmesan Chips With Feta Sauce (gluten Free)

Baked zucchini chips,perfect for picky eater of any age, with creamy,slightly briny feta sauce!

Step 1: INGREDIENTS:

  • 2 medium zucchinis
  • 1 cup gluten free breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 2 zucchinis, thinly sliced to 1/4-inch thick rounds
  • 1/2 cup gluten free all-purpose flour
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 large eggs, beaten

For the feta sauce:

  • 1 cup sour cream
  • 1/2 cup feta cheese
  • 1 spring onion
  • 1/4 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp thyme
  • 1 tbsp olive oil

Step 2: DIRECTIONS:

  1. Preheat oven at 425 F. Line a sheet pan with aluminum foil and set aside.
  2. In a large bowl, combine breadcrumbs,paprika,salt,pepper and Parmesan; set aside.
  3. Working in batches, dredge zucchini rounds in flour, dip into eggs, then dredge in Panko mixture, pressing to coat.
  4. Add zucchini rounds to the sheet pan , and bake until evenly golden and crispy, about 15-20 minutes.
  5. In the meanwhile,prepare feta sauce: Simply,combine all ingredients in a blender and pulse until thoroughly blended and become sauce.Remove zucchinis from the oven and serve immediately.
