Kudo's to you, I was searching for "potato pancakes" and your response is the only simple one found. Will try it tomorrow morning. I bought a 10 pound bag of potatoes for $1.84 and besides baking them wanted to try something different. I did run across some recipes that called for all purpose flour to the mix (maybe hold the concoction together better, who knows). But looking forward to trying it!

Might even add shredded cheese to the mix for added flavor and consistency (even bacon bits)!
