Introduction: Simple Carrot Soup

thought id share my recipe for the easiest soup ever and super tasty to go with it not many ingredients so no long list to shop for what you need is

6 large carrots

1 medium/large onion

1 veg stock cube

salt and pepper

olive oil (just a little)

Step 1: Prepping the Veg

slice carrots into 1cm slices

slice onion

add oil to pan

Step 2: Cooking

chuck it all in a large pan and let it sweat in the oil for 5 mins just to soften a little then add 1 1/2 pints of boiling water to a stock cube mix it well then add to pan let it simmer for about 20 mins untill carrots are nice and soft add salt and pepper to taste then bang it in a blender i normally pulse it till i get it nice and creamy and voila happy days tuck in also if im making it for me and the wife minus the kids i normally chuck a chilli and a clove of garlic in there as a rough guide i get 3 bowls out that amount enjoy folks

    This makes me want to try similar things with other vegetables too. Have you ever done anything other than carrots?
