I've been doing this in Africa for 4-5 years now. Everything in here seems accurate. The only issue I see is the scale. If you are going to all the soaking, germinating, drying and roasting, you may as well do enough for multiple batches. Most all-grain homebrew recipes call for 12-15 lb of malt. Malting doesn't add or subtract much weight from grain. Go big.
