This is a 'French Style' Terrine, Pistachio nuts are common, for the colour they bring, but sometimes Almond is used, it is just a little crunch in the texture. The bacon is not smoked in this case to keep the flavour mild, if you were using something stronger like Venison, a smoked Bacon or Spec would traditionally be used.
