Defective bean means all of those beans that after or before the roast have noticeable differences not only physical but in taste. If you combine well roasted beans with ones that aren't you will taste paper o coal in your coffee. The beans used in this instructable came from batches that were overdeveloped (further form dark roast) the results are oily and dark coffee beans that you will appreciate in the photos; other defects came form origin that is malformed beans, inmature beans, insect damage etc. All these kinds of beans will appear in most of your whole bean bags, look for them break one and taste them. Taking care of these beans is what makes speciallty coffe special
